Most coffee grown in the Chiapas, Mexico region is of high quality because of the high elevation and shade-grown conditions. The conditions, however, make transportation in the region difficult, especially to access the farms. Some of those who had trucks would purchase the coffee beans at a below-cost price knowing that the farmers needed any money they could get. These purchasers are referred to as coyotes, because of the way they prey on the famers givng them pennies on the dollar. With help of fair-trade businesses around the world, farmers are creating cooperatives to market their coffee and create sustainable communities.
